I'm bit of a fangirl for these two:

Pedal of the Day - it's not great but he seems to have a lot of pedals you don't see elsewhere. Kind of channel I subscribe to and only actually watch one in ten.
Pedal Experiments - low budget/ bit amateur but a) he gave me a pedal b) again features unusual pedals sometimes and his reviews can be quite thorough and C) he does do some wacky stuff with pedals that I haven't seen on other channels.
Of the more polished ones I like Brett Kingman as he's a great guitarist and has a nice straightforward approach.
Chicago Musical Exchange did good videos, I'm now wondering if they still make them but I liked their approach.
Sweetwater aren't brilliant but they are quick with new gear (they sell about half a million guitars a year plus pedals, amps, pro audio, etc, etc) and occasionally have an interesting interview or feature. Again, probably subscribe but be choosey on which ones you want.
I like Mike Hermans as well. I know that his dad rock with no talking approach doesn't appeal to everyone but he's a clever musician.

+1 for Brett Kingman. He usually gets the length of his reviews spot on and he's a fine player. Gets to the point quickly and has the skill to show a pedal at its best.

I met Chris at the Birmingham show. Nice guy! I only occasionally watch his channel though.

For music theory David Bennett Piano ... never mind it's piano as it's music theory and applies to every instrument.
For learning more advanced guitar, 501chorusecho ... AKA home skooling Tom Bukovac ... this is by far the best thing i've seen on YT and it's the most I've learned from any other guitarist.

Another vote for Rhett Shull and Justin Hawkins.Takes a a few goes to get used to his style but some great content.
I'm als a fan of Music is Win. I imagine Tyler isn't everyone's cup of tea but the videos are well made and the content is generally interesting.

Home Skoolin' is the best show on YT!! My favourite without a doubt.
If you like TPS then definitely give the Studio Rats a go, they're great.
Rick Beato is an obvious one if you haven't come across him yet, aswell as Guthrie Trapp and Tim Lerch. I had a lesson with Tim a couple of months ago and he is a fantastic educator!

I don’t watch nearly as many gear review videos as I used to back when I started (2019), but I don’t remember finding any objective review channels. They all had their biases. TPS is great but they only show the stuff they like. Dave Simpson can be entertaining but has yet to say something is shit. Elmo Karjalainen is not afraid to say something is shit, but he’s got very narrow tastes and indeed I’ve found myself enjoying gear he’s panned, and viceversa. I guess the ideal scenario is when Elmo shows you the downsides of something someone else likes, so you can form your own opinion.
I don’t watch videos made by the shops unless there’s literally nothing else showcasing the stuff I am interested in. I try to go looking for the comments I don’t want to hear when I’m obsessing about a pedal, an amp, etc.
What I do watch (a lot) these days are teaching videos. Marty Music, Justin Guitar and Paul Stafford Cook and others have interesting things (the former two’s stuff overlaps a but that’s OK).

It’s not kit related but Pat Finnerty is killing it at the moment. I’ve got Dead Man Trail stuck in my head. Follow his what makes this song stink series from the first one as the lore builds each episode
Trogly's Guitar Show can be good if the video is an unboxing of a Gibson - even if it's just to confirm their appalling QC isn't something new.
