Are all plain wounds equal?

I used to think so and that the difference was in the wound strings but I’m using a new brand and after 3 weeks they sound very “nasal” as if I’m picking right next to the bridge. 

So, is it a subconscious prejudice against this set or is there a difference between different brands of plain string of the same gauge?

There's a difference. The exact metallurgy of the steel varies a bit, and some/most are plated - the type (usually tin, but I think not always) and thickness of the plating will make a difference too.

As ICBM said plus:

If you are using coated strings, the coating can affect the sound.
The consistency of the wire 'draw'. As close to equal thickness as possible down the length of the wire. It wouldn't change the tone so much (in my experience) and is more likely to effect intonation. Cheaper drawn wire is less likely to be consistent
