Also, if you’re looking for a gentler side, American Football’s first album has that lovely hypnotic driving feeling of good post rock.

The Album Leaf might be worth a go - Sigur Ros liked them enough to invite them on tour and let them record their album at their studio. Not by-the-numbers but a similar vibe.
What about that chap who used to be on here? Quiet, shy fellow, wasn't he in a post rock band? Wonky Bridge Disaster, something like that anyway.

Do Make Say Think worth another mention. Very much their own thing, I would say instrumental music more than post-rock.
I also like Efrim from Godspeed's other band - A Silver Mt Zion (and other variations on the theme) - I've seen them live a couple of times - they are superb. But not going to be everyone's cup of tea. Vocal style is an acquired taste.

Saxon Shore are worth a listen, although much more mainstream post rock.
Check out ISIS - Oceanic. Also their album Panopticon. More post metal though.
I like a 'post-rock' band to bring something a bit different to the table - another band that does that for me is Early Day Miners. Some really haunting tracks - love the space they leave in the arrangement - lots going on in the drums, but very little hi-hat or cymbals, which helps.
