The three-way is probably a negative feedback switch. Adding -ve feedback allows more headroom but seems quieter. This is a really common way to mod the 5e3 circuit.
The other may be a fixed/cathode bias switch.

I’ve had 3 5e3s now and each one slightly different.
there is a 3 way mini toggle and a 2 way .
based in Stourbridge.
